POLEZZNO matcha tea is declared cooking matcha, i.e. culinary matcha, but according to its quality, it belongs to the Ceremonial class, i.e. ceremonial matcha tea. The difference between the varieties lies in the richer bouquet and less pronounced bitterness characteristic of each type of matcha tea.

Geographically, the POLEZZNO matcha river belongs to Shizuoka Prefecture (Shizuoka), a nature park located in the south of the central region of Honshu Island and washed by the waters of the Pacific Ocean.
